AGED WINE: General notes on aged wines, old wines and wine rarities: Wine is a natural product that can undergo changes in taste and color over decades of storage. Therefore we cannot guarantee palatability and faultless taste of old wines. We do, however, handle the purchase of these wines with great care, verify optimal storage conditions, examine as far as possible the bottle history, and perform visual checks of the bottle contents for cloudiness and changes in consistency. As mentioned, older, matured wines change their original taste during decades of storage and may develop a mature character. White wines tend to darken in color (similar to Cognac, Sherry or amber) and can form sediment; red wines often develop sediment at the bottle bottom. An appearance and taste experience for aged wines that differs from young wines is not unusual. For wine drinkers who have problems with the sometimes fresh, pronounced acidity of young wines, aged wines can be a real pleasure, as the wine acidity loses strength and aggressiveness over the years.
