AGED WINE: General notes on aged wines, old wines and wine rarities: Wine is a natural product that can undergo changes in taste and color over decades of storage. Therefore we cannot guarantee the drinkability and flawless taste of old wines. However, when buying these wines we proceed with the utmost care, ensure optimal storage conditions,, check as far as possible the bottle history, and conduct visual inspections of the content for cloudiness and changes in consistency. As mentioned, older, mature wines change their original taste during decades of storage and may develop a mature character. White wines often darken in color (reminiscent of Cognac, Sherry or amber) and may form sediment; red wines commonly develop a deposit at the bottom of the bottle. An appearance and taste experience different from young wines is not unusual for aged wines. For wine lovers who have problems with the sometimes fresh, pronounced acidity of young wines, aged wines can be a real delight, as the wine acidity loses strength and aggressiveness over the years.
