The Domaine Jean-Louis Chave is often described as the “Pope of Hermitage.” From the small town of Mauves, located just south of the Hermitage AOC in the northern Rhône, Chave wines —made in a very traditional way— represent the “pinnacle of the hierarchy” in quality for the Hermitage denomination. The winery owns parcels in the seven lieux-dits of the famous Hermitage granite hill, which allows them to produce wines of extraordinary complexity and finesse. Domaine Chave was founded in the 15th century and has, over the centuries, witnessed an incredible succession of talented vintners. Gérard Chave ran the estate until gradually handing over the reins to his son, Jean-Louis Chave. Vinification to craft this great wine takes place in three large oak foudres, and the subsequent aging occurs in small French oak barrels, using between 20% and 30% new wood each year. Afterwards, the wines are blended in tanks and bottled unfined. If necessary, they undergo light egg-white fining before bottling. This lot comprises three bottles of the 2005, 2006, and 2007 vintages of its Hermitage. It is an extraordinary wine with incredible energy, a dense body and a core of black plum, black currant, and cherry on infusion. The finish is powerful but exceptionally well defined, with remarkable length and precision thanks to perfectly integrated tannins. The three bottles are perfect to drink now or to keep aging. They have always been stored in a climate-controlled cellar (16°C) with proper humidity (85%) for the best possible preservation.
