The name “Bepi” was the nickname by which Giuseppe Quintarelli was called by his family. The wine comes from a traditional blend predominately of Corvina and Corvinone (55%), Rondinella (30%), and Cabernet Sauvignon (15%), with some sources also reporting the presence of small amounts of other traditional grape varieties. The grapes are harvested by hand and carefully selected. (iDealwine) Vinification involves a very slow fermentation, about 45 days, followed by a maceration on the skins of about 20 days. The wine is then aged for an exceptionally long period, about 7 years, in large Slavonian oak barrels.
