2021 Jean-Paul & Benoît Droin – Chablis Grand Cru « Vaudésir » + 2 Chablis – 3 bottles (0.75 L) THE DOMAIN Based in Chablis since the 17th century, the Droin family is among the oldest winegrowing lines in the appellation. Benoît Droin, who succeeded his father Jean-Paul, now runs a estate of about 25 hectares, present on most of the Chablis Grands Crus (Les Clos, Valmur, Vaudésir, Grenouilles, Blanchot, Bougros) as well as many Premiers Crus. The house style is precise and crystalline, favoring fruit purity, tension and the salinity typical of the Kimmeridgian. The estate is regularly praised by international wine press (Burghound, Vinous, Decanter, Revue du Vin de France). In Chablis, Droin stands alongside the indispensable references such as Raveneau, Vincent Dauvissat, William Fèvre, Christian Moreau and Louis Michel. The wines produced are rare, with great freshness, finely chiselled and a beautiful mineral definition – a “classic” vintage highly sought after by Chablis lovers who prefer a taut and digestible style. TASTING & FOOD PAIRINGS • Chablis 2021 (x2): lemon, green apple and white flowers on the nose, brisk, saline and crunchy on the palate. Ready to drink, can be kept 3 to 5 years. Pairing: oysters, seafood, gougères, fresh goat cheese. • Chablis Grand Cru Vaudésir 2021 (x1): the finest and most ethereal Grand Cru of Chablis, nestled in a sheltered valley. Zesty, white flowers and gunflint on the nose, ample and finely chiselled on the palate, long saline finish. Can be enjoyed today after decanting, but will age well for 8 to 12 years. Pairing: lobster, turbot with beurre blanc, Bresse chicken in cream, aged Comté.
