Harvest from September 13 to 15, grapes in perfect health, 19-day maceration with two pigeages per day. Aged 21 months in oak barrels. Bottled on July 24, 2019. Robe rubis clair brillante. A very open nose releasing a lot of energy welcomes the taster; notes mingling spices, orange zest, Provençal herbs and ripe, even jammy red fruits compose a precise nose, at once sunny and fresh. The palate repeats this sensation of crushed leaf with a cool mentholated side followed by a discreet acidity. The aromas of licorice typical of the wine circle around sweet tannins signaling good ripeness of the grapes. The tasting ends on a tonic acidic note with a cherry pit. Accord: baron d’agneau aux herbes, rognons, ris de veau aux cèpes. Conservation: 8/10 years
