This white Burgundy wine comes from the lieux-dit Aux Champs Perdrix, located in the Hautes-Côtes de Beaune, a high-altitude area where cool nights and chalky soils naturally preserve the energy and finesse of the grape. Produced from 100% Chardonnay, this 2024 vintage favors precision over opulence. The nose reveals notes of fresh citrus, candied lemon, grapefruit zest, and white flowers. On the palate, the wine is upright, delicate and intensely fresh, carried by a fine mineral backbone, a delicate texture and a persistent saline finish. Jérémy Carteret’s approach is deliberately non-interventionist: manual harvest, spontaneous fermentations, winemaking respectful of the wine and bottling without fining or filtration. This philosophy lets the character of the calcareous terroir and the vivacity of Chardonnay fully express itself. Served between 10 and 12 °C, this Hautes-Côtes de Beaune white will elegantly accompany a fish fillet, shellfish, poultry in cream, a mushroom risotto, or a well-aged goat cheese.
