SCOTCH WHISKY: Kilchoman Machir Bay is a peated single malt from the island of Islay, Scotland. PROFILE: This peated single malt reveals a powerful, saline character, marked by notes of ashy smoke, citrus, and tropical fruits. It is a blend of whiskies matured 90% in first-fill bourbon casks and 10% in Oloroso sherry casks. The Isle of Skye is home to a single distillery—Talisker—and many enthusiasts rank its malt among the greatest whiskies in Scotland; and with good reason. After reaching the age at which it is typically bottled (10 years), each "Classic Malt" spends an additional six months or so in a "finishing" cask—sourced from the Iberian Peninsula—to become a "Distillers Edition." Specifically, casks that previously held Amoroso Sherry (the name means "amorous" in Spanish) are used for this second maturation of Talisker Distillers Edition. The whisky’s unique, peaty, and spicy character is further enhanced by this finishing process and the careful attention paid during its time in these casks, resulting in a profile defined by finesse and sweetness, as well as richness. This double maturation amplifies the natural, sweet notes of Talisker Scotch while mellowing its spirited temperament.
